Our West may not be the wild untamed frontier of yesteryear, but its challenges are real, its landscape still undeveloped. In whiskey there is still much to build and we stand now in our place of shared history to pursue our own audacious endeavor. EXPLORE PROVENANCE

American Single Malt Whiskey is, by its very nature and existence, innovative. That said, we don’t innovate for the sake of innovation. Rather, we explore who we are and where we come from. In three key areas of our work we push the conventions of single malt whiskey even further, but always with the intention of expressing this provenance.

Barley

While our industry has embraced standardisation and commoditisation in grain, we stand firm in our stubborn belief that barley actually contributes to the flavor of whiskey. Our Heritage Collection whiskeys all use roasted malts inspired by Pacific Northwest beer culture that bring a wide range of flavours not typically found in single malt. Our Colere bottlings in the Outpost Range go one step further, exploring entirely new varieties of barley never before used in whiskey making.

Oak

While we use a variety of oak, such as conventional ex-Bourbon and ex-Sherry casks to name a couple, we fill predominantly into slow-growth, air-dried virgin oak for our Heritage Collection which brings a sweetness and approachability to our single malts. In our Garryana bottlings in the Outpost Range, we feature a remarkable species of native oak that only grows in the Pacific Northwest.

Peat

The Peated expression in our Heritage Collection explores how traditional Scottish peat comes together with the roasted malts, Belgian brewer’s yeast, and virgin American oak casks that define our house style. Our upcoming Solum American Single Malt in the Outpost Range will reveal the true provenance of peat harvested from the bogs of Washington State using decidedly new world techniques.
